Thaw a single serving of frozen spinach; drain. Slice Trader Joe's Fire-Roasted Red Peppers into thin strips, add to spinach. Add about one tablespoon of diced onion to the spinach along with finely shredded mozzarella cheese. Crack one whole egg and two egg whites into a mixing bowl, add about a tablespoon of milk to the eggs, beat until you get even consistency. Cover the bottom of a frying pan with a thin layer of olive oil, turn on the stove to high and pour the egg mixture into the pan. Let the egg mixture sit and cook until bubbly, and sprinkle the spinach mixture over the surface of the eggs. Then, using a spatula, begin scrambling the mixture until the eggs are fully cooked. Accompany the eggs with toast and a cup of coffee in a sentimental mug. Eat the scramblet off of a crab plate just for fun. For maximum enjoyment savor the breakfast during the first fifteen minutes of Regis and Kelly.
